Madhoos.... laddooos


2cups finely sieved wheat flour
1/2 cup ghee
1 cup powdered sugar 
7-8 cardamoms,powdered.

Method:

Heat ghee in a thick bottomed vessel. When hot lower the fire. Add wheat flour till it becomes brown,stirring continuously. Add sugar. Remove from d fire n mix thoroughly along with cardamom powder.when slightly cool, shape into small laddos...makes abt 20-25 laddoos..

Doc chicken green masala


1 whole chicken ( with bones )

Grind:
1 bunch cilantro with stem
2 sprigs of mint leaves without stem - (12 leaves)
2 sprigs of curry leaves without stem - (40 leaves)
2 stalks of green onion (whole)
1/4 lime sized ball of tamarind
1 cup fresh shredded coconut
2 green chillies without seeds (adjust this to your spice level )

Method:
In Hot oil - around 2 tbsp add,
2 cloves
2 cardamom
1 inch cinnamon
Until the fragrance is out m smelling nice :))
Then add 1/2 tsp whole jeera
When jeera splutters
1 big thinly sliced red onion, fry until light brown
Add 1/2 tsp chicken curry  powder or any curry pdr
1 heaped tsp coriander powder
1/2 tsp turmeric powder
Salt 2 tsp or to taste
Ginger garlic paste 2 tbsp, n fry till raw smell is gone and Fry well until oil oozes out

Add the ground masala n cook well until raw smell goes away and the oil oozes out
Add chicken
Salt
Water as needed and cook with lid closed
Once cooked add 1 tsp crushed dry methi lvs
Add 1/2 tsp garam masala
Simmer until oil oozes out or gravy slightly thickens
Turn off flame and add 1/2 lime juice

Pudina and mango syrup Madhu ishtyle


3cups water,3cups sugar,2 big bundle pudina leaves,3raw
 mangoes,4tbsp viniger,pinch of green colour.
Method:boil water n sugar.off flame add d pudina leaves n bundle .keep fr 8-9 hrs.cook mangoes with little water along with 5-6 cardomnon.after it cools ,strain n add to d sugar n pudina syrup,vinigar,n green colour.stir well n store in bottle.....taste good with soda.

Madu Mattha


Mattha:
Fresh curds 3cups,4tbsp powdered sugar,jeera pow half tsp(roasted),pepper powder half tsp,pinch of salt,cashewnut bits 3tbsp,raisens3tbsp,pomegranate 4tbsp.mix all the ingredients.

Madhu Mutton or chicken thick gravy



Ikg keema,4-5chopped onions,4 -5 tomatoes,5chopped green chillies, ginger garlic paste 1tsp,3 fried potatoes, handful or little more fresh peas, baffat pow2-3 tsp, haldi ,coconut milkhalf cup n salt to taste.
Fry onions,chillies nd gin gar paste.add tomatoes and cook little with haldi and salt n baffat pow and fry.then add keema(cooked) and peas and cook well.lastly add coconut milk n season wth cor leaves n lime.

Madhu's mango.... Delight!!!

Mango delight:

3 big ripe mangoes,skinned n chopped,milk of 1 coconut(thick milk abt3-4cups)250gms jaggery,scraped,6cardamoms,powdered.

Mix coconut milk,jaggery n cardamom.mix thoroughly till d jaggery dissolves.then add d chopped mangoes.refrigerate n then serve cold....instead of jaggery milkmaid can also b added.

Madhu's Aam Panna

6 raw mangoes, pressure cook skin d mangoes n grind in mixie n strain the juice.

add 4cups sugar to water n make sugar syrup.add d mangoes n syrup n mix well n store in a jar.

Juice can b prepared,when desired,by adding enough water to a little syrup in glass with a pinch of black salt n roasted jeera(optional)

Madhu Chicken Chops

Chicken chops--chicken I kg(leg ,breast)

Garlic 1 pod
Chilli powder 2 tsp
Pepper power1tsp 
Green chilli paste1tsp
Butter 2tsp

Method-
Heat butter till it melts. Remove from fire n add garlic ,chilli powder, pepper, green chilli psate and salt.
Marinate chicken for minimum 4-5 hrs.....

Powder potato wafers(150gms), roll chicken in wafer powder. Put some butter on each piece and arrange pieces in greased tray n bake for 30 min at 250 degrees.F'

Madhu brinjal sukka


15 small brinjals,(slit) Kashmiri chillies10 ,jeera 1tsp ,khuskhus1tsp Coriander seeds 3 tbsp Mustard half tsp, Turmeric Garlic 5 3 big onions Tamarind (big lump) Grind all the above ingredients to a fine paste with water. In a pan add 3-4 tbsp of oil, add mustard, crushed garlic, urud dal n kadi patta. Add the masala n fry well till all the raw smell goes then add little water jaggery n salt when it starts boiling add d brinjals n cook till done.

Onion 2
Palak leaves

Method- 
Heat butter till it melts. Remove from fire n add garlic ,chilli powder, pepper, green chilli paste n salt. Marinate chicken for min 4-5 hrs and fry the chcken on high flame for a few minutes. 

Heat oil/ butter and fry whole garam masala and add onions, when almost brown add pureed palak, when it boils add the chicken pieces and boil till chicken is cooked.


Pray for the bats that are trapped while you eat the curry :D
